Cauliflower Pizza With Spinach & Goat Cheese


New Years Day has come and gone, and with that comes a whole lot of new resolutions. If you're like me, you made a resolution to eat healthier and get your butt into shape! So, with that resolution, I'll now be bringing you more than just cupcake recipes. Here's to a happy and healthy 2013!

Now, you may be scratching your head. Cauliflower pizza, how does that work? Cauliflower pizza means no flour, no wheat, no gluten, which ultimately means it's healthier for you! This was my first attempt, and it turned out pretty well if you ask me. I'm not a huge fan of cauliflower, but in the name of getting healthy, I figured it was worth a try! The hubby loved it, so, I'll chalk it up as a win.

Pizza "Dough"
2 cups cooked, riced cauliflower
2 cup shredded mozzarella cheese 
2 eggs, beaten 
2 tsp dried oregano 
1 tsp crushed garlic 
1 tsp garlic salt 

Toppings
1 tablespoons softened unsalted butter
2 1/2 cup grated mozzarella cheese
1 1/2 cups spinach
1 tsp minced garlic
1 tsp extra virgin olive oil
1 tsp herbs de provence
Goat cheese crumbles - as much as you want


Preheat oven to 450 F degrees. Chop the cauliflower florets into chunks and steam them until slightly soft, about 15 minutes. Rice the steamed pieces in a ricer or use a blender. One large Cauliflower should produce 3 cups riced.

To make the "dough", in a medium bowl, stir together 1 cup cauliflower, egg, and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the baking stone or sheet, and using your hands, pat out into a large rectangle, making it as thin as possible (Remember, this isn't real pizza dough, so it will be flimsy once baked). I used a baking pan with a Silpat to keep it from sticking.


Bake at 450 F for about 15 minutes, until golden brown.


For the spinach topping, in small sauce pan, cook spinach with 1 tsp extra virgin olive oil, 1 tsp minced garlic, and 1 tsp herbs de provence until tender. Set aside.

Once your dough has baked, brush on 1 tbsp of melted butter, then top with mozzarella, spinach, and goat cheese crumbles. Place in oven for another 5 to 10 minutes, or until cheese is fully melted.


This recipe makes 4 serving (8 slices total) and is around 415 calories per serving.

  3. I've never heard of a pizza with these ingredients, but I love cauliflower and I love spinach, so this might just be something I'd like to try. Thanks for sharing.
