Baked Buffalo Chicken Bites


Appetizers, we share a love hate relationship. I love the way they taste but I hate what they do to my body! If you think like me, then you will love this recipe! Baked Buffalo Chicken Bites are baked but you'd never guess it. Make them for football season, family cookout or just for the hell of it! If you aren't so health conscience, they are even tastier with some homemade ranch, yum!

Baked Buffalo Chicken Bites
2 large chicken breasts, shredded
1/4 cup buffalo wing sauce (medium heat)
1 3/4 cup sharp cheddar cheese, shredded
3 1/2 oz 1/3 less fat Philadelphia cream cheese, softened
1/4 cup green onions, diced
1 cup all-purpose flour
4 large eggs, lightly beaten
4 cups Corn Flakes Cereal, crushed
1/2 tablespoon garlic powder

Yields 15 - 20 medium sized bites.

Preheat oven to 350 F. Line large baking sheet with wax paper. Shred cooked chicken and combine in a large bowl with softened cream cheese, hot sauce, green onions, cheddar cheese and garlic powder. Fold your mixture with a wooden spoon until well combined.

Using an ice cream scoop or large spoon, scoop out enough mixture to create golf ball sized chicken bites. To keep mixture from sticking to your hands, spray your hands with cooking spray before rolling into balls. Place balls on a separate plate until finished scooping. 

In separate bowls, set out your flour, eggs and crushed Corn Flakes. Dip each ball, first in the flour, then eggs and finally roll until coated in the corn flakes. This will require you to wash your hands a few times, It will get messy! Place the balls on your lined baking sheet and bake for 20 to 25 minutes. Once golden brown remove from oven and serve warm with your favorite dipping sauce, enjoy!

Blog Tips: Activating Blogger Threaded Comments


My typical posts consist of glitter or sugar, but today I thought I would do a post about blog tips! This might not be new to some of you, but if you are like me you'll be really excited to find this fix! If you weren't already aware Blogger hasn't always had the threaded comment replies, which was quite annoying. But, the people spoke and Blogger listened! You now have the option of threaded comments where there is a reply button for each comment left on your posts. For most of us who use Blogger built templates, the threaded comment replies will be automatically activated. If you do not see the comment reply button (which was my case), here is a check list to get them up and running:

First, check to make sure your comment form is set as embed - Go to Settings > Comments > Comment Form Placement > Select "Embedded below post". Make sure to scroll to the foot of the page and save.

The next step is to set your site feed to full - Got to Settings > Site feed > Allow Blog Feeds > From the drop down menu choose "Full". Scroll to the foot of the page and save.



When you have completed these steps, save and refresh your blog and you should be good to go! If you still don't see the comment reply button, try clearing your browser's cache. Now if ALL of that fails you may not be using a Blogger template or there may be some coding in your current template preventing the threaded comment form.

Sitting Room Halfway Reveal!!

Well, I just couldn't stand it any longer!! I am still waiting on my two custom sitting chairs but I just couldn't wait to share what I've completed in my new sitting room! It only took five months but I finally got the most of it put together. It took many hours of antiquing and shopping...but hey, that's alright with me! I just wish I would have had this all done when HGTV was filming our closing episode scenes. I still need a few things like a rug and of course my two sitting chairs but I feel like I have begun to capture my vision of shabby chic! What do you think?
For my sitting room I decided to go with a aqua, cream, brown and yellow color palette. Mostly earth tones with pops of aqua and yellow. I found this couch at Stacy's Furniture and fell in love the whimsical curve of the couch arms. It is one of the few things in the room that is not an antique.
An antique table my mother found at a garage sale. Since this picture I have added green and brown moss to fill the bird cage and prop up the nest and bird.
These antique shutters are my absolute favorite part of the room. I found these while shopping with my mother-in-law at my local downtown square. I used the antique window you see hanging in the wall cut out to fill the random space between our sitting room and the living room. I had been searching for a stained glass window to hang there but found this window with original glass for only $28! I thought that was the better option since every stained glass window I found that was big enough for the space was over $175 
I say the shutter are my favorite but this little end table gives them a run for their money! This is also an antique I found at my downtown square that has been redone with paint and wiring on the door...perfect for my little shabby chic sitting room!

Now all that is left is the rug and my two sitting chairs. I'll be sure to share when they finally come in and my room is complete!
