Appetizers, we share a love hate relationship. I love the way they taste but I hate what they do to my body! If you think like me, then you will love this recipe! Baked Buffalo Chicken Bites are baked but you'd never guess it. Make them for football season, family cookout or just for the hell of it! If you aren't so health conscience, they are even tastier with some homemade ranch, yum!
Baked Buffalo Chicken Bites
2 large chicken breasts, shredded
1/4 cup buffalo wing sauce (medium heat)
1 3/4 cup sharp cheddar cheese, shredded
3 1/2 oz 1/3 less fat Philadelphia cream cheese, softened
1/4 cup green onions, diced
1 cup all-purpose flour
4 large eggs, lightly beaten
4 cups Corn Flakes Cereal, crushed
1/2 tablespoon garlic powder
Yields 15 - 20 medium sized bites.
Preheat oven to 350 F. Line large baking sheet with wax paper. Shred cooked chicken and combine in a large bowl with softened cream cheese, hot sauce, green onions, cheddar cheese and garlic powder. Fold your mixture with a wooden spoon until well combined.
Using an ice cream scoop or large spoon, scoop out enough mixture to create golf ball sized chicken bites. To keep mixture from sticking to your hands, spray your hands with cooking spray before rolling into balls. Place balls on a separate plate until finished scooping.
In separate bowls, set out your flour, eggs and crushed Corn Flakes. Dip each ball, first in the flour, then eggs and finally roll until coated in the corn flakes. This will require you to wash your hands a few times, It will get messy! Place the balls on your lined baking sheet and bake for 20 to 25 minutes. Once golden brown remove from oven and serve warm with your favorite dipping sauce, enjoy!

DeleteDo you think you replace some of the cheddar cheese with blue cheese crumbles??? I love anything that combines buffalo and blue cheese. Also, if I'm feeling lazy, how do you think canned chicken would work?
ReplyDeleteI am not a big blue cheese person but if you like that I am sure it would be great!! I love goat cheese, I bet that would work also. Canned chicken should work, I would just drain it and pat it dry before combining with the rest of the ingredients. Or you could buy a ready to eat rotisserie chicken and just pic the chicken off. Mmmmm making me hungry lol :)
